Santa Maria Maggiore has a new De.Co., the Municipal designation that protects and enhances traditional recipes.
The "Gnoch from the chigiàa" ("Dumplings from the spoon") has been branded with the new De.Co.
Simple ingredients, linked to the rural economy of Vigezzo Valley: white flour and water.
It is a dumpling of irregular shape which is formed by sliding the thick paste in salted boiling water, using a spoon.
The traditional recipe wants the "gnoch" to be served with butter and local cheese, possibly enriched with sage (or other alpine herbs).
