The latest arrival at the VCO Chamber of Commerce is a new association, “Brisaula from the Ossola Valley”, which brings together the major bresaola producers of the province. The province’s Chamber of Commerce, which its President Tarcisio Ruschetti likes to call “the house of enterprise” in recognition of its continuing commitment to extending its institutional remit to become a reference point for businesses and a catalyst for the establishment of new groupings, has been instrumental in setting up this new producers’ association.
The characteristic air-dried beef bresaola is one of the Ossola’s major delicacies, and is closely bound up with local tradition.
Says the newly elected president of the association, Marino Materni of the Ca’ du Preu of Malesco, “The association’s aim is to draw up regulations to guarantee the producers’ commitment at all stages of the production process, from the selection of the raw material through the process of drying and maturing the meat. And of course to encourage consumption of bresaola, whether by local people or visitors”.
The association was started under the aegis of the Interreg Project “Lake Maggiore, its Valleys, its Flavours”, which sees the Chamber of Commerce as its guiding spirit on Italian territory. The Project is now ending, but has been responsible for many initiatives featuring local products.
To date nine of the major (both as regards size and quality) bresaola producers of the province have joined the Ossola Valley Brisaula Association. However, the association is happy to welcome other members motivated by the same passion for the product and determination to adhere to the quality standards required.
