The Novara area has two speciality bakery products: Novara biscuits and San Gaudenzio’s Bread.
“Biscotti di Novara” are made in Novara and the surrounding area from wheat flour, sugar and whole fresh eggs. They have an ancient history; they were first mentioned as being made in convents in the 16th century, to a recipe invented by the nuns.
San Gaudenzio’s Bread is a sort of panettone, made in Novara from flour, sugar, eggs, sultanas and vanilla flavouring, and marketed in the town. For over forty years it was made exclusively for the festival of the patron saint, San Gaudenzio, but is now sold throughout the year.
